how do I reheat a quiche or cook hand pies / pot pies?

who is edith, anyway?
first things first, edith is a saint. but beyond that, she is mike’s mother. through his whole life she was well known amongst friends and family as the pie queen. a high school cooking teacher in a past life, she had mike making pies with her at a young age. it felt nothing short of mandatory for her name to grace our box. if you’re lucky you may get to see her enjoying a slice or picking up a pie for herself from time to time.
do you accept tips?
tipping has been a topic of heavy discussion in this industry for decades. when we opened the cafe, we followed suit, and created a policy for our employees that we thought was fair based on the idea that we had to participate in a tipped system, falling in line only because “that’s how it’s done”. in reality, we never actually want to participate in any racist or class dividing systems of any kind - tipping having a very well-documented and challenging past on those scores. now, with over a year of data on cash flow in our brick and mortar + beyond, we are making a very welcomed change.
on August 13th 2024, we eliminated tipping from our cafe and farmer’s market operations. we provided raises across the board for our previously tipped staff, as well as a starting wage increase for any future employees. to do this slightly increased our prices on whole and half pies (though slices will stayed the same).
can your pies be frozen?
while we always suggesting diving into them the day you get them, many pies will hold up ok to freezing. we can’t guarantee their quality, but if you choose to, we’ve found the best method is to freeze it fully, then double wrap it in plastic, before wrapping it in aluminum foil. like that it should keep for a month or two. allow it to defrost in the refrigerator. fruit pies can be reheated in the oven at 350º topped with foil for 15-20 minutes, or until heated through. do not reheat custard or cream pies.
